The restaurant of the
Gran Hotel Claridge.
The menu is served in the INIZIO dining room, inside the Gran Hotel Claridge Granada, at Plaza de Villamena 1. This is the historic centre: the Cathedral stands opposite, Plaza de Bib-Rambla and the Alcaicería are a few metres away, and the Alhambra is a walk uphill through the Realejo. You do not need to be a hotel guest to book a table.
If you are driving, there is valet parking for €8 — request it in the notes field when you book, as the area around the Cathedral is pedestrian and traffic-restricted. How to reach Plaza de Villamena.
A tasting menu for two.
A table for two is the most common booking and the easiest to seat: €120 per guest —€240 for the table— and, with the pairing added, €65 more per person. Both guests take the same menu, because it is single and fixed; the sommelier adjusts the glasses to each. For groups and celebrations there is also the private dining room for events.

The INIZIO tasting menu is not a succession of dishes. It is the childhood of chef Rafael Arroyo told in ten acts. Ten specific memories — grandmother Ana's kitchen, his father's bean stew, his mother's afternoon snack without peppers — cooked with contemporary European technique, Andalusian produce and the same intuition that passes from one generation to the next.
Each course answers an everyday question — what do you want for breakfast? do you want the breast? one more slice? — that everyone in Granada has heard at home. Here, haute cuisine serves to preserve and elevate the domestic, not to move it away.
The menu changes every season to follow local produce: the Granada Vega, the seas of Almuñécar and Motril, the Lújar and Tejeda ranges. What does not change is the logic: cooking Granada with the calm and precision of Europe's best tables.

Gazpacho
«Cold from the fridge»
We begin the way an Andalusian summer begins: with a glass of gazpacho straight from the fridge. Tomato from the Granada vegetable gardens, settled bread, green olive oil. It is the course that recalls the plastic table under the vine, just before lunch.

Bread with tomato, olive oil and ham
«What do you want for breakfast?»
The question of any morning in any Andalusian home. Bread toasted in a wood oven, grated tomato, extra virgin olive oil from the Vega and Iberian ham. Apparent simplicity that hides a tribute to the ritual of family breakfast.

Tuna and tomato empanadilla
«No peppers, Mum»
The afternoon-snack empanadilla, the one made on Fridays. Thin, crisp pastry, Mediterranean tuna and a long tomato sofrito. No peppers, because young Rafa did not like them: the menu is a conversation with the mother who cooked without recipes, on instinct alone.

Puchero
«Grandmother Ana's»
Chickpeas, beef, hen, bacon and ham bone simmered for hours. Puchero is the most intimate dish in Andalusia: every family has its own, and this is the chef's grandmother Ana's. We serve it in a golden, full-bodied broth, the way she made it on Sundays.

Bean stew
«My father's»
White beans with Vera paprika, garlic and bay leaf. The father's spoon, the winter one. A humble dish elevated by the quality of the produce and by patience. It usually comes with a touch of morcilla that perfumes the broth without taking it over.

Clams
«Just the broth, to dip the bread»
Carril clams opened in the pan with white wine, garlic and parsley. The trick is in the broth: that cloudy liquid you dip bread into until the plate is clean. We serve crusty bread from the neighbourhood bakery and green olive oil to finish.

Pinchito skewer
«From the fair»
Chicken marinated in a Moorish spice blend — cumin, sweet paprika, coriander — and grilled over charcoal. The pinchito moruno is living proof of the Andalusi heritage. In Granada it is eaten standing up, at the fair, dipped in mojo picón. We bring it to the table without losing that informality.

Roast chicken
«I'll have the breast, with extra jus»
Free-range chicken cooked in a clay pot with its own juices, garlic, bay leaf and local white wine. Juicy breast, golden legs, concentrated jus to mop up. It is the Sunday family lunch, served with no more artifice than necessary.

Contessa cake
«One more slice»
The frozen chocolate and cream cake that filled the family freezer for birthdays. Layers of chocolate sponge, whipped cream and a crisp coating. We reinterpret it with single-origin dark chocolate and fresh cream, but keep the spirit of the forbidden treat everyone always asked to repeat.

Fruit salad
«Peeled and without pips»
We close the menu the way grandmother closed lunch: with a bowl of fresh seasonal fruit, peeled and without pips. Watermelon, peach, melon, plums. Fruit from the Vega, sweet with no added sugar. A light, honest and necessary full stop.
