Our home, open to the world. When you cross the threshold, you will not be entering a restaurant: you will be entering the way Irene and I understand life. Gastronomy is not a craft that ends when the fire goes out — it is a way of relating to my land, my history and my people.
I have always felt that in Andalusia, cooking is not simply preparing food. It is a way of life; it is memory, it is heritage, it is a conversation with our mothers, our grandmothers, and with every generation who cooked before us with respect, with intuition and with honesty.

Inizio is born from the intention to honour the land that shaped me as a cook and as a person. At Inizio there is a deep reflection on how Andalusian cuisine is the result of centuries of history, cultural blending and adaptation to the environment.
In our kitchen we aim to honour our roots from a contemporary, delicate and emotional perspective. To keep the truth of Andalusian cuisine while imagining a new way of living it.
